Summer meal plan

For my first attempt at writing a meal plan I focused on trying to remind myself that vegan food doesn't have to be boring or unhealthy, but longer-term I wouldn't necessarily be able to afford the ingredients. I wrote down anything vegan I knew I could cook and put in lots of reminders to stay hydrated. I didn't keep up with this: I spent too much time & energy in the kitchen trying to follow it but I found some favourite recipes. It's here now as a tasty starting point and something to work towards. It'll be summer again before we know it - and some of the recipes work for cold weather - and changing habits/routines takes a really long time anyway so I will be referring back to this in the meantime. There are at least a couple of errors; I haven't found bake-at-home vegan croissants, apparently banana nesquik isn't vegan and I haven't made the rissotto.
