Chocolate cake

Having one or two cake recipes on hand seems like a good idea. This one doesn't have any frills so you may want it with ice cream or cream, but it can be made in just one bowl because it's so simple.
This recipe is vegan if you use plant milk, and since vegan chocolate is expensive it's nice to be able to make chocolate cake sometimes. It's also helpful to not have to worry anyway about having eggs in the house.
I use a 6x4" oven-proof dish - which isn't a cake dish, so I line it with baking parchment. This makes a very small cake. I think the correct tin for this is a pound cake tin which I do have but forget about if I'm not baking for something special.
Opening an oven that has cooled for 10 minutes is a small step in reducing the stress of being in a kitchen but small adaptations like this can really add up, for me anyway, when making cooking possible with health problems.
Vegan chocolate cake
Makes 4 slices
1/2 cup plain flour
1 tsp baking powder
1/3 cup sugar
1/4 cup cocoa powder
1/2 cup milk
3 tbsp sunflower oil
Stir together dry ingredients with a whisk
Make a well then pour in wet ingredients
Combine to make a batter
Line a small loaf tin with baking paper
Pour in mix
Bake at 180°C for 20 minutes
Turn off oven but leave cake in for another 10 minutes
