Simple mushroom soup

Try this recipe if you need a straightforward but delicious soup. I use a pressure cooker to make most soups (more to come) but don't be put off from making this in a saucepan.


1 tbsp oil

1 cup finely diced portobello mushroom

1 cup finely chopped leek

1 potato, diced

1 parsnip, peeled and diced

1 tbsp plain flour

2.5 cups water

1 tbsp single cream


  1. Fry leek and mushroom in oil until brown

  2. Stir in flour

  3. Add parsnip, potato, water, and half stock cube

  4. Cook for 5 minutes in pressure cooker on highest setting

  5. Let cool then blend until smooth

  6. Reheat, and stir in cream
