In February I uploaded a video to Instagram for no-knead pizza, but I thought it might be worth explaining a bit more about it now given that it isn't traditional.

I recently came off benefits, after receiving Universal Credit for a few years. Thoughout this time I needed to pare back ingredients for obvious reasons, but cheaper ingredients can be difficult to make heartening without more time and effort in the kitchen.

Is kneading dough really that difficult? Yes, if you have POTS or any health impairment that affects your ability to stand up. It also adds one messy step to an already extensive list of tasks that need completing in order to get a home-cooked meal onto the table.

It is worth bearing in mind a few things for making the best of this recipe:

  • When proving the dough it really does help to cover the bowl with cling film! I have found that it keeps the dough warmer but also moist so a crust doesn't form. Worth a try with beeswax paper for a lower waste option

  • If you're having trouble flipping the pizza, try use non-stick baking parchment - you can find this made from recycled paper

  • Use a small amount of wholemeal flour in the mix because it adds an earthiness to the pizza base

You don't need a special pizza baking tray for this recipe I hope it is easy to try - and use again if approved! Using yeast for baking is really special -aside from the lovely smell, it's a little bit of magic when it's making dinner for you.
